Ingredients

  • 2 slices thick-cut multigrain seeded bread
  • 1 ripe avocado, mashed
  • 2 oz smoked salmon
  • 1 large egg, soft-boiled
  • 1 large egg, poached
  • 1 tbsp crumbled feta cheese
  • 1 tsp smoked paprika
  • Fresh dill and cilantro for garnish
  • 1 lime, sliced
  • Assorted fruit: raspberries, blueberries, kiwi, mango, and fresh fig
  • 1 lavender macaron

Instructions

  1. Toast the multigrain bread slices until golden and crisp.
  2. Spread a generous layer of mashed avocado onto both slices of toast.
  3. For the first slice, layer the smoked salmon over the avocado, top with a soft-boiled egg half, a squeeze of lime, and fresh dill.
  4. For the second slice, top the avocado with a poached egg, sprinkle with crumbled feta, smoked paprika, and fresh cilantro.
  5. Arrange a colorful selection of berries, sliced kiwi, mango cubes, and a halved fig on the side of the plate.
  6. Add a macaron for a sweet finish and serve immediately.
