Avocado Toast with Poached Egg and Smoked Salmon

A vibrant open-faced sandwich featuring creamy avocado, a poached egg, and smoked salmon, making it one of our favorite healthy summer recipes.

Ingredients

  • 2 slices of sourdough bread
  • 1 ripe avocado
  • 1 large egg
  • 2 slices of smoked salmon
  • 1/4 cup fresh dill, chopped
  • 2 slices of baguette
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped walnuts
  • 2 thinly sliced pears
  • 1 starfruit, sliced
  • 1 passion fruit
  • 3 blackberries
  • 1 green macaron
  • 2 slices of peach

Instructions

  1. Toast two slices of whole grain bread until golden and crisp.
  2. Spread mashed avocado evenly on one slice of toast.
  3. Place a poached egg on top of the avocado toast.
  4. Arrange smoked salmon in a rose shape on top of the avocado.
  5. Sprinkle chopped dill over the poached egg.
  6. Serve with a side of fresh fruit including starfruit, passion fruit, blackberries, and peach slices.
  7. Serve with a side of green macaron.
