Ingredients

  • 1 slice sourdough bread
  • 1/2 ripe avocado
  • 1 large egg
  • 4-5 cherry tomatoes
  • 2 tbsp crumbled feta cheese
  • 1 tsp fresh dill, chopped
  • 1 tsp fresh microgreens
  • 1/2 tsp black sesame seeds
  • 1/2 tsp white sesame seeds
  • Pinch of red pepper flakes
  • Salt to taste
  • Lemon wedge for serving

Instructions

  1. Toast the sourdough bread until golden brown and crisp.
  2. In a bowl, mash the avocado with a pinch of salt and a squeeze of lemon juice.
  3. Spread the mashed avocado evenly over the toasted bread.
  4. Poach the egg in simmering water for 3-4 minutes until the white is set and the yolk is runny.
  5. Place the poached egg on top of the avocado toast.
  6. Top with halved cherry tomatoes, crumbled feta, fresh dill, and microgreens.
  7. Sprinkle with black and white sesame seeds and red pepper flakes.
  8. Serve immediately with a lemon wedge on the side.
