Bacon, Avocado & Cheese Breakfast Sandwich

A hearty breakfast sandwich with scrambled eggs, melted cheese, crispy bacon, and fresh avocado on a toasted bun.

Ingredients

  • 2 large eggs
  • 2 tbsp shredded cheddar cheese
  • 2 slices thick-cut bacon
  • 1/4 ripe avocado, sliced
  • 1 tbsp mayonnaise
  • 1 tsp chopped fresh chives
  • 1 small toasted brioche bun
  • Salt and black pepper to taste
  • 1 tsp butter

Instructions

  1. Heat butter in a non-stick skillet over medium heat. Add eggs, season with salt and pepper, and scramble until just set.
  2. Sprinkle cheese over the eggs and cook for 1 minute until melted.
  3. In a separate pan, cook bacon until crispy. Drain on paper towels.
  4. Mix mayonnaise and chives in a small bowl.
  5. Slice the brioche bun in half and spread the mayonnaise mixture on both halves.
  6. Layer the scrambled eggs, bacon, and avocado slices on the bottom half of the bun.
  7. Top with the other half of the bun and serve immediately.
