Caramel Almond Cranberry Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup caramel sauce
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries, chopped
  • Coarse sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Roll dough into 1-inch balls and place on prepared baking sheet, spacing 2 inches apart.
  7. Use the bottom of a glass to gently press down on each cookie to flatten slightly.
  8. Sprinkle each cookie with coarse sugar.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
  10. Remove from oven and let cool on baking sheet for 5 minutes.
  11. Top each cookie with a dollop of caramel sauce, then sprinkle with sliced almonds and chopped cranberries.
  12. Allow caramel to set before serving.
