Charred Peach and Burrata Garden Salad

Ingredients

  • 3 ripe peaches, halved
  • 5 ounces mixed greens
  • 8 ounces burrata
  • 1 small cucumber, shaved
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1 tablespoon white wine vinegar
  • 1/4 cup torn basil leaves
  • Sea salt and cracked black pepper

Instructions

  1. Heat a grill pan over medium-high heat and brush the peaches lightly with olive oil.
  2. Char the peaches cut-side down until grill marks appear and the fruit softens slightly.
  3. Arrange the greens, cucumber, and red onion across a large serving platter.
  4. Tear the burrata over the salad and nestle the warm peaches throughout.
  5. Whisk the remaining olive oil with vinegar, salt, and pepper, then spoon over the salad.
  6. Finish with balsamic glaze and basil just before serving.
