Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 1 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and black pepper on a baking sheet.
  3. Roast cauliflower for 20-25 minutes until golden brown and tender.
  4. In a saucepan, combine heavy cream, chicken broth, cheddar cheese, and Parmesan cheese over medium heat.
  5. Stir until cheese is fully melted and sauce is smooth.
  6. In a small bowl, mix panko breadcrumbs, melted butter, and dried thyme.
  7. In a large glass baking dish, combine roasted cauliflower and cheese sauce.
  8. Sprinkle the breadcrumb mixture evenly over the top.
  9. Bake for 10-15 minutes until the top is golden and bubbly.
  10. Garnish with fresh parsley before serving.
