Cheesy Sausage Sourdough Bread

Ingredients

  • 500g sourdough starter
  • 300g bread flour
  • 200g water
  • 10g salt
  • 150g cooked crumbled sausage
  • 150g shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp dried thyme

Instructions

  1. Mix sourdough starter, bread flour, water, and salt in a large bowl until combined.
  2. Cover and let rest at room temperature for 30 minutes.
  3. Fold the dough several times over 15 minutes, then cover and let rise for 1 hour.
  4. Preheat oven to 230°C (450°F) with a cast iron skillet inside.
  5. Shape the dough into a round loaf and place it on parchment paper in the hot skillet.
  6. Score the top of the dough with a sharp knife.
  7. Sprinkle crumbled sausage and shredded cheese evenly over the top of the dough.
  8. Bake for 20 minutes, then reduce heat to 200°C (400°F) and bake for another 25 minutes until golden brown.
  9. Let cool in the skillet for 10 minutes before serving.
