Ingredients

  • 4 large waffles
  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup vegetable oil
  • 1/4 cup maple syrup
  • 2 tbsp chopped fresh chives
  • 2 tbsp grated parmesan cheese

Instructions

  1. In a bowl, mix buttermilk, 1/2 tsp salt, and 1/4 tsp pepper. Add chicken thighs, cover, and refrigerate for 15 minutes.
  2. In a separate bowl, whisk flour, paprika, garlic powder, onion powder, cayenne, 1/2 tsp salt, and 1/4 tsp pepper.
  3. Remove chicken from buttermilk, letting excess drip off. Dredge in flour mixture, pressing to coat. Set aside.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry chicken for 6-8 minutes per side until golden and cooked through. Transfer to a wire rack to drain.
  5. Place waffles in a glass baking dish. Top with fried chicken pieces.
  6. Sprinkle with chopped chives and grated parmesan cheese.
  7. Drizzle with maple syrup just before serving.
