Chili-Lime Sweet Potato Bowl

Ingredients

  • 1 lb ground beef or turkey
  • 2 medium sweet potatoes, diced into 1-inch cubes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with 1 tbsp olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and slightly browned.
  3. While sweet potatoes roast, heat 1 tbsp olive oil in a skillet over medium heat. Add ground meat and cook until browned, about 5-7 minutes. Season with salt and pepper.
  4. In a large bowl, combine roasted sweet potatoes, cooked meat, black beans, and corn. Mix gently.
  5. Transfer mixture to a serving bowl. Top with shredded cheese and return to oven for 5 minutes until cheese is melted and bubbly.
  6. Garnish with chopped cilantro and serve with lime wedges on the side.
