Ingredients

  • 12 slices of mixed grain bagel
  • 200g smoked salmon
  • 1 bunch of fresh asparagus
  • 100g whipped ricotta
  • 100g pumpkin hummus
  • 100g black olive tapenade with walnuts
  • 100g butter
  • 1 small jar of harissa jam
  • 10 radishes
  • 1 bunch of watercress
  • 1 bunch of fresh dill
  • 1 bunch of chives
  • 1 lemon
  • 1 orange
  • 1 small bowl of olive oil
  • 1 small bowl of vinegar

Instructions

  1. Arrange sliced bagels on a large wooden board, alternating between plain and seeded varieties.
  2. Place smoked salmon slices on the board, garnishing with fresh dill sprigs.
  3. Add a bunch of fresh asparagus spears to the board.
  4. Serve whipped ricotta in a small bowl, topped with chopped chives and a drizzle of olive oil.
  5. Present pumpkin hummus in a bowl, garnished with pumpkin seeds and a swirl of olive oil.
  6. Place black olive tapenade with walnuts in a bowl, ready to serve.
  7. Offer a small dish of butter with a sprinkle of sea salt.
  8. Serve harissa jam in a jar with a small spoon for spreading.
  9. Arrange fresh radishes and watercress on the side of the board for a crisp salad element.
