Chipotle-Marinated Steak & Cilantro-Lime Shrimp Skewers

Ingredients

  • 1.5 lbs flank steak, trimmed
  • 1/4 cup olive oil
  • 3 tbsp chipotle in adobo sauce, minced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced and zested
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch wedges
  • 1 pint cherry tomatoes
  • 12 small red potatoes, halved
  • 12 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together olive oil, chipotle, garlic, cumin, paprika, salt, and pepper to create the marinade.
  2. Place steak in a resealable bag and pour marinade over it, ensuring it's fully coated. Refrigerate for at least 2 hours or overnight.
  3. In another bowl, combine shrimp with lime juice, zest, cilantro, salt, and pepper. Marinate for 30 minutes at room temperature.
  4. Preheat grill to medium-high heat.
  5. Thread steak, bell peppers, red onion, cherry tomatoes, and potatoes onto skewers, alternating ingredients.
  6. Thread marinated shrimp onto separate skewers.
  7. Grill steak skewers for 4-5 minutes per side for medium-rare, and shrimp skewers for 2-3 minutes per side until pink and opaque.
  8. Remove from grill and let rest for 5 minutes before serving.
  9. Garnish with fresh cilantro and lime wedges.
