Delectable Chocolate Peanut Butter Crisp Bars

Ingredients

  • 1 cup (150g) crispy rice cereal
  • 1/2 cup (125g) creamy peanut butter
  • 1/4 cup (60ml) honey
  • 1/2 cup (115g) unsalted butter
  • 1 1/2 cups (300g) milk chocolate chips
  • 1/4 cup (30g) chopped peanuts (optional)

Instructions

  1. Line an 8x8-inch baking pan with parchment paper, allowing overhang for easy removal.
  2. In a medium saucepan over low heat, melt the butter, peanut butter, and honey, stirring constantly until smooth and combined.
  3. Remove from heat and stir in the crispy rice cereal until evenly coated.
  4. Press the mixture firmly into the prepared pan using a spatula or parchment paper to create an even layer.
  5. Refrigerate for 15 minutes to set the base.
  6. While the base chills, melt the milk chocolate chips in a heatproof bowl over a pot of simmering water (double boiler), stirring until smooth.
  7. Pour the melted chocolate over the chilled base, spreading evenly with a spatula.
  8. Sprinkle chopped peanuts on top if desired, then refrigerate for at least 1 hour or until fully set.
  9. Lift the bars out using the parchment overhang and cut into 8 squares.
