Citrus Fennel Salad with Pistachios
Ingredients
- 2 fennel bulbs, shaved thin
- 2 oranges, segmented
- 1 avocado, sliced
- 3 cups arugula
- 1/4 cup chopped mint
- 1/4 cup chopped dill
- 1/4 cup toasted pistachios
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- Sea salt and black pepper
Instructions

Shave the fennel very thinly and soak briefly in ice water for extra crispness, then drain well.

Arrange the arugula, fennel, orange segments, and avocado on a platter.

Scatter the mint, dill, and pistachios over the top.

Whisk the olive oil with lemon juice, salt, and pepper.

Drizzle the dressing over the salad just before serving.

Finish with extra fennel fronds for a fresh, aromatic garnish.
