Creamy Sausage and Pepper Skillet with Rice

Ingredients

  • 1 lb (450g) smoked sausage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large cast iron skillet over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
  3. Add bell peppers and onion to the skillet and sauté until softened, about 8 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add rice and stir to coat with oil and vegetables.
  6. Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes.
  7. Stir in heavy cream, paprika, cayenne pepper, salt, and black pepper.
  8. Return the sausage to the skillet and mix well.
  9. Simmer uncovered for 5-10 minutes until the sauce thickens and rice is cooked through.
  10. Garnish with chopped fresh parsley and additional red pepper flakes if desired.
  11. Serve hot directly from the skillet.
