Dragonfruit & Mango Chia Parfait

Ingredients

  • 1 cup dragonfruit puree
  • 1/2 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 cup diced mango
  • 1/2 cup sliced dragonfruit
  • 2 tablespoons shredded coconut
  • 4 fresh mint leaves

Instructions

  1. In a bowl, whisk together chia seeds, almond milk, and maple syrup until well combined.
  2. Cover and refrigerate for at least 4 hours or overnight until chia pudding thickens.
  3. Layer the bottom of two glasses with 1/4 cup of dragonfruit puree.
  4. Top with 1/2 cup of chia pudding.
  5. Add a layer of diced mango and sliced dragonfruit.
  6. Top with remaining chia pudding and dragonfruit puree.
  7. Garnish with shredded coconut and mint leaves.
