Gourmet Mango Crepe Delights

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup water
  • 2 large eggs
  • 2 tbsp melted butter
  • 1/4 tsp salt
  • 1 ripe mango, diced
  • 1/2 cup whipped ricotta cheese
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • Fresh mint leaves for garnish
  • Powdered sugar for dusting
  • 1/4 cup heavy cream
  • 2 tbsp powdered sugar (for dipping sauce)

Instructions

  1. In a bowl, whisk together flour, milk, water, eggs, melted butter, and salt until smooth. Let batter rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter.
  3. Pour 1/4 cup of batter into the skillet and swirl to coat the bottom evenly. Cook for 1-2 minutes until golden, then flip and cook for another 30 seconds. Repeat to make 8 crepes.
  4. In a separate bowl, mix diced mango, whipped ricotta, honey, and vanilla extract until well combined.
  5. Spread a thin layer of the mango-ricotta filling onto each crepe, roll tightly, and place on a serving platter.
  6. For the dipping sauce, whisk together heavy cream and powdered sugar until smooth. Serve in a small dish alongside the crepes.
  7. Garnish the crepes with fresh mint leaves and dust with powdered sugar before serving.
