Ingredients

  • 4 (6 oz) salmon fillets
  • 1 cup pearl couscous
  • 1 cup diced mango
  • 1 cup diced avocado
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup pomegranate seeds
  • 1 lime, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin

Instructions

  1. Preheat grill to medium-high heat.
  2. Cook pearl couscous according to package instructions.
  3. Grill salmon fillets for 4-5 minutes per side, or until cooked through.
  4. Grill lime halves for 2 minutes per side until charred.
  5. In a large bowl, combine mango, avocado, red onion, cilantro, and pomegranate seeds.
  6. Add cooked couscous to the bowl and toss gently to combine.
  7. Season with salt, pepper, and cumin.
  8. Plate the couscous salad, top with grilled salmon, and garnish with grilled lime.
