Grilled Salmon Quinoa Power Bowl

Ingredients

  • 4 (6 oz) skin-on salmon fillets
  • 1 cup uncooked tri-color quinoa
  • 2 cups water
  • 1 lime, cut into wedges
  • 1 ripe avocado, thinly sliced
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sesame seeds
  • 1 cup diced mango
  • 1/2 cup diced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley

Instructions

  1. Rinse quinoa under cold water and combine with water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes. Fluff with a fork and stir in 2 tablespoons chopped cilantro.
  2. Preheat grill or grill pan to medium-high heat. Season salmon fillets with salt and pepper. Grill for 4-5 minutes per side, or until cooked through and flaky. Brush with a glaze during the last 2 minutes of cooking.
  3. In a bowl, combine diced mango, cucumber, red onion, and chopped herbs. Season with salt and pepper to taste.
  4. To assemble, divide quinoa among four bowls. Top each with a salmon fillet, avocado slices, and mango salsa. Garnish with lime wedge and additional herbs.
