Ingredients

  • 4 salmon fillets
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Cook quinoa according to package instructions.
  2. Season salmon fillets with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Grill salmon for 4-5 minutes per side until cooked through.
  4. Assemble bowls with quinoa, cherry tomatoes, cucumber, avocado, and grilled salmon.
  5. Garnish with fresh dill and serve.
