Grilled Salmon Quinoa Power Bowl

Ingredients

  • 1 lb salmon fillet, skin-on
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked quinoa
  • 1 cup roasted sweet potato cubes
  • 1 cup guacamole
  • 1 cup purple cabbage, thinly sliced
  • 1 cup arugula
  • 1 cup mango salsa (diced mango, red onion, jalapeño, cilantro)
  • 2 lime wedges
  • 1 tbsp sesame seeds

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with 1 tsp olive oil, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
  3. Season salmon fillet with smoked paprika, garlic powder, salt, and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook salmon skin-side down for 6-8 minutes until crispy, then flip and cook for another 4-5 minutes until cooked through. Remove and let rest.
  4. In a bowl, combine cooked quinoa, roasted sweet potato, guacamole, purple cabbage, and arugula.
  5. Top with flaked salmon, mango salsa, and sprinkle with sesame seeds.
  6. Serve with lime wedges on the side.
