Grilled Steak Bowl

Ingredients

  • 1.5 lbs flank steak
  • 1 lb green beans, trimmed
  • 1 pint cherry tomatoes
  • 2 large sweet potatoes, peeled and cut into wedges
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato wedges with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  3. While sweet potatoes roast, heat 1 tbsp olive oil in a skillet over high heat. Season steak with salt and pepper. Sear steak for 4-5 minutes per side for medium-rare, or until desired doneness. Let rest for 5 minutes, then slice against the grain.
  4. In a large bowl, combine green beans and cherry tomatoes. Toss with a drizzle of olive oil, salt, and pepper. Sauté in the same skillet used for steak for 5-7 minutes until tender-crisp.
  5. Divide green beans and tomatoes among four bowls. Top with sliced steak and roasted sweet potato wedges.
  6. Garnish with grated parmesan cheese and chopped parsley. Serve immediately.
