Grilled Steak & Mango Rice Bowl

Ingredients

  • 1 lb flank steak
  • 1 cup black rice
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 limes, cut into wedges
  • 2 green onions, sliced
  • 1/4 cup toasted sesame seeds
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil

Instructions

  1. Cook black rice according to package instructions.
  2. Season steak with salt, pepper, and olive oil. Grill over medium-high heat for 4-5 minutes per side for medium-rare. Let rest, then slice against the grain.
  3. In a bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeño, and lime juice. Season with salt and pepper to taste.
  4. Divide cooked black rice between four bowls. Top with sliced steak, mango salsa, green onions, and sesame seeds.
  5. Serve with lime wedges on the side.
