Ingredients

  • 1 lb flank steak
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1 lime, cut into wedges
  • 1/4 cup pickled red onions
  • 1/4 cup creamy cilantro dressing
  • 1 tsp chili flakes
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions using water.
  2. Season steak with salt and pepper, then grill over medium-high heat for 4-5 minutes per side for medium-rare. Let rest 5 minutes before slicing.
  3. In a bowl, combine black beans, corn, red onion, jalapeño, cilantro, and lime zest. Season with salt, pepper, and chili flakes.
  4. Toss the cooked quinoa with a drizzle of the creamy cilantro dressing.
  5. Divide quinoa among four bowls. Top with sliced steak, corn and black bean mixture, pickled red onions, avocado slices, and a grilled lime wedge.
  6. Drizzle with additional creamy cilantro dressing and serve immediately.
