Ingredients

  • 1 lb flank steak
  • 1 cup quinoa
  • 1/2 cup black rice
  • 1 cup roasted sweet potatoes (mix of purple and orange)
  • 1 cup roasted corn kernels
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 4 radishes, thinly sliced
  • 1 cup cooked black beans
  • 1/2 cup pumpkin seeds
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Cook black rice according to package instructions and set aside.
  3. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Roast for 25-30 minutes until tender.
  4. Season steak with salt and pepper. Grill or pan-sear over medium-high heat for 4-5 minutes per side for medium-rare. Let rest, then slice into strips.
  5. In a large bowl, combine cooked quinoa, black rice, roasted sweet potatoes, black beans, and corn.
  6. Arrange the bowl with sections of steak, roasted sweet potatoes, black rice, quinoa, corn, avocado slices, red onion, radishes, and pumpkin seeds.
  7. Drizzle with a creamy sauce (e.g., tahini-lemon dressing or yogurt-based sauce) and garnish with fresh cilantro and crumbled feta.
  8. Serve immediately.
