Grilled Steak & Shrimp Kabobs

Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch wedges
  • 1 zucchini, sliced into 1/2-inch rounds
  • 8 oz orzo pasta
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced for garnish

Instructions

  1. Cook orzo pasta according to package instructions, then rinse with cold water and drain well.
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper to make the marinade.
  3. Add steak cubes and shrimp to the marinade, tossing to coat evenly. Cover and refrigerate for 30 minutes to 2 hours.
  4. Preheat grill to medium-high heat.
  5. Thread steak, shrimp, bell peppers, red onion, and zucchini onto skewers, alternating ingredients.
  6. Grill kabobs for 8-10 minutes, turning occasionally, until steak is cooked through and shrimp are pink and opaque.
  7. In a large serving bowl, combine cooked orzo, cherry tomatoes, red onion, olives, feta cheese, and parsley.
  8. Drizzle with remaining marinade and toss gently to combine.
  9. Serve kabobs over the orzo salad, garnished with lemon slices.
