Grilled Vegetable Focaccia Sandwich

Ingredients

  • 4 slices focaccia bread
  • 1 cup fresh spinach
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brush both sides of focaccia slices with olive oil and sprinkle with oregano and sea salt.
  3. Toast focaccia slices in the oven for 8-10 minutes until golden brown.
  4. In a skillet over medium heat, sauté red onion and red bell pepper in 1 tbsp olive oil for 5 minutes until softened.
  5. Add spinach to the skillet and cook until wilted, about 2 minutes.
  6. Layer the vegetable mixture onto one slice of toasted focaccia, then top with feta and mozzarella cheese.
  7. Place the second slice of focaccia on top and press gently.
  8. Return the sandwich to the oven for 5-7 minutes until the cheese is melted and bubbly.
  9. Remove from oven, let cool slightly, then cut into quarters and stack.
  10. Garnish with fresh dill and parsley and a sprinkle of sea salt before serving.
