Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries (blueberries, raspberries, cranberries)
  • 1/4 cup chocolate chips
  • 1/4 cup chopped walnuts
  • 1/4 cup shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 6-cup muffin tin.
  2. In a large bowl, mix oats, almond milk, honey, coconut oil, egg, and vanilla until well combined.
  3. Fold in berries, chocolate chips, and walnuts.
  4. Divide batter evenly among the muffin cups.
  5. Top each cup with shredded coconut.
  6. Bake for 20-25 minutes, or until golden brown and set in the center.
  7. Let cool in the tin for 5 minutes before removing to a wire rack.
