Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until well combined.
  2. Press the mixture firmly into the bottom of an 8x8 inch baking pan lined with parchment paper.
  3. In a separate bowl, beat peanut butter, powdered sugar, and vanilla extract until smooth.
  4. In another bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
  6. Spread the peanut butter filling evenly over the crust.
  7. Melt chocolate chips and coconut oil in a double boiler or microwave in 30-second intervals, stirring until smooth.
  8. Pour the melted chocolate over the peanut butter layer and spread evenly.
  9. Refrigerate for at least 2 hours or until set.
  10. Lift the bar out using the parchment paper and cut into 12 squares.
