Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs with salt, pepper, and paprika.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear chicken thighs skin-side down until golden brown, about 6-8 minutes.
  5. Flip chicken and add garlic to the skillet, cooking for 1 minute.
  6. Pour in heavy cream and stir to combine.
  7. Add sun-dried tomatoes and spinach, stirring until spinach wilts.
  8. Sprinkle mozzarella cheese over the top.
  9. Transfer skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and cheese is melted.
  10. Garnish with fresh parsley before serving.
