Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes

Instructions

  1. Season salmon fillets with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and cook salmon for 4-5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes, sautéing for 1 minute.
  4. Pour in heavy cream and chicken broth, stirring to combine and bring to a simmer.
  5. Add spinach and red pepper flakes, cooking until spinach is wilted.
  6. Return salmon to the skillet, spooning sauce over the top.
  7. Garnish with fresh parsley and serve immediately.
