Ingredients

  • 1 lb ground turkey
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, about 8 minutes.
  3. Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper, cooking for 1 minute.
  4. Add sliced peppers and onions, cooking until tender, about 10 minutes.
  5. Sprinkle shredded cheddar cheese over the top and cover until melted.
  6. Garnish with chopped cilantro and serve immediately.
