Lemon Sugar Cookies

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • Coarse sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the egg yolk, lemon juice, and lemon zest until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until a soft dough forms.
  5. Roll dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
  6. Use the bottom of a glass to gently press down on each cookie, creating a shallow indentation in the center.
  7. Fill each indentation with about 1 teaspoon of lemon curd.
  8. Sprinkle the tops of the cookies with coarse sugar.
  9. Bake for 12-15 minutes, or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
