Mango & Lime Chia Seed Pudding

Ingredients

  • 1 cup chia seeds
  • 2 cups coconut milk
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 cup mango puree
  • 4 fresh figs, sliced
  • 2 tbsp chopped fresh mint
  • 1 lime, sliced

Instructions

  1. In a bowl, whisk together chia seeds, coconut milk, lime juice, and honey until well combined.
  2. Cover and refrigerate for at least 4 hours or overnight until pudding thickens.
  3. Layer mango puree at the bottom of each glass jar.
  4. Add a layer of chia pudding on top of the mango puree.
  5. Top with sliced figs and a sprig of fresh mint.
  6. Serve chilled.
