Ingredients

  • 4 falafel balls
  • 1 cup cooked quinoa
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pine nuts
  • 1/2 cup grilled eggplant and zucchini
  • 1/2 cup tzatziki sauce
  • 1 lemon wedge
  • Fresh parsley for garnish

Instructions

  1. Arrange cooked quinoa in the bottom of a large bowl.
  2. Top with diced cucumber, tomato, red onion, and olives.
  3. Add crumbled feta cheese and pine nuts.
  4. Place grilled eggplant and zucchini on one side.
  5. Arrange falafel balls on another section.
  6. Spoon tzatziki sauce into the center and drizzle with olive oil.
  7. Garnish with a lemon wedge and fresh parsley.
  8. Serve immediately.
