  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned oats
  • 1 cup chopped pecans
  • 1 cup chocolate chips
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in oats, pecans, and chocolate chips.
  7. Scoop dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Sprinkle each cookie with a pinch of flaky sea salt.
  9. Bake for 10-12 minutes, or until edges are golden brown and centers are set.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
