Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1 tbsp chia seeds
  • 1/4 cup raspberry compote
  • 1/4 cup Greek yogurt
  • 1 tsp rose water
  • 1/4 cup chopped pistachios
  • 3 fresh raspberries
  • 1 tsp honey
  • 1/2 tsp lemon zest

Instructions

  1. In a small bowl, mix oats, chia seeds, and almond milk. Let sit for 10 minutes until thickened.
  2. In a separate bowl, combine Greek yogurt, rose water, honey, and lemon zest. Fold in half of the chopped pistachios.
  3. Layer the oat mixture in a glass, followed by a layer of raspberry compote, then the pistachio rose water yogurt.
  4. Top with fresh raspberries and the remaining chopped pistachios.
  5. Serve immediately or chill for 30 minutes to allow flavors to meld.
