Ingredients

  • 1 lb pizza dough
  • 1/4 cup extra virgin olive oil
  • 1/2 cup roasted cherry tomatoes
  • 1/2 cup black olives, pitted
  • 4 oz fresh mozzarella, torn
  • 1 tsp dried oregano
  • 1 tsp flaky sea salt
  • Fresh thyme sprigs for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Roll out pizza dough into a 12x16 inch rectangle and place on a parchment-lined baking sheet.
  3. Drizzle dough with olive oil and dimple the surface with fingertips.
  4. Scatter roasted tomatoes and olives over the dough.
  5. Dot with mozzarella and sprinkle with oregano and sea salt.
  6. Bake for 20-25 minutes until golden and crisp.
  7. Garnish with fresh thyme and serve warm.
