Rosemary Grapefruit Spritz

Ingredients

  • 1/4 cup sugar
  • 1/4 cup water
  • 2 rosemary sprigs
  • 3 ounces fresh grapefruit juice
  • 2 ounces Aperol
  • 4 ounces sparkling wine
  • 2 ounces chilled soda water
  • Ice cubes
  • Grapefruit wedges, for garnish
  • Extra rosemary sprigs, for garnish

Instructions

  1. Simmer the sugar, water, and rosemary together for 5 minutes, then cool and strain.
  2. Fill two glasses with ice.
  3. Divide the grapefruit juice, Aperol, and 1 tablespoon rosemary syrup between the glasses.
  4. Top each glass with sparkling wine and soda water.
  5. Stir gently to combine without flattening the bubbles.
  6. Garnish with grapefruit wedges and fresh rosemary before serving.
