Ingredients

  • 1 sheet puff pastry, thawed
  • 1/2 cup cooked sausage, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry sheet and cut into 8 equal squares.
  3. In a bowl, mix sausage, red onion, cherry tomatoes, feta cheese, olive oil, thyme, salt, and pepper.
  4. Place a heaping tablespoon of the filling into the center of each pastry square.
  5. Fold the corners of each square up to the center to form a cup shape, pinching the edges to seal.
  6. Place the pastry cups on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.
  7. Let cool slightly before serving. Garnish with fresh thyme sprigs.
