Simple Halloumi Wraps

Grilled halloumi, vegetables, and fresh herbs wrapped in warm flatbread for a light and satisfying Mediterranean lunch.

Ingredients

  • 4 whole wheat flatbreads
  • 200g halloumi cheese, sliced into 1cm cubes
  • 1 zucchini, sliced into 1cm rounds
  • 1 red bell pepper, sliced into strips
  • 100g fresh spinach leaves
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh dill
  • Salt and black pepper to taste

Instructions

  1. Preheat a grill pan or skillet over medium-high heat.
  2. Brush the halloumi slices, zucchini, and red pepper with olive oil and season with salt, pepper, and oregano.
  3. Grill the halloumi and vegetables for 2-3 minutes per side until golden brown and slightly charred.
  4. Warm the flatbreads in a dry pan or microwave for 30 seconds.
  5. Assemble the wraps by layering spinach, grilled vegetables, and halloumi on each flatbread.
  6. Drizzle with lemon juice and sprinkle with lemon zest and fresh dill.
  7. Fold the flatbreads in half and serve immediately.
