Smoky Black Bean & Corn Burger with Zesty Mango-Lime Slaw

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 1/2 cup rolled oats
  • 1/4 cup red onion, finely diced
  • 1/4 cup green bell pepper, finely diced
  • 1 clove garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 4 whole wheat burger buns
  • 1 cup red cabbage, thinly sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup fresh cilantro, chopped
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil (for slaw)
  • 1/2 tsp honey
  • Salt to taste

Instructions

  1. In a food processor, pulse black beans, corn, oats, red onion, green bell pepper, and garlic until coarsely chopped.
  2. Transfer mixture to a bowl and stir in smoked paprika, cumin, chili powder, salt, and black pepper.
  3. Form mixture into 4 equal patties, pressing firmly to hold shape.
  4. Heat olive oil in a skillet over medium heat. Cook patties for 5-6 minutes per side until golden brown and heated through.
  5. While patties cook, prepare slaw by combining red cabbage, carrots, cilantro, mango, red onion, jalapeño, lime juice, olive oil, honey, and salt in a bowl. Toss well and refrigerate until ready to serve.
  6. Toast burger buns lightly in a dry skillet or oven.
  7. Assemble burgers by placing a patty on the bottom bun, topping with mango-lime slaw, and covering with the top bun.
