Ingredients

  • 8 oz soba noodles
  • 1 lb large shrimp, peeled and deveined
  • 1 cup shelled edamame
  • 1 cup snap peas
  • 1/4 cup thinly sliced red onion
  • 2 green onions, sliced
  • 2 tablespoons black sesame seeds
  • 1/4 cup toasted sesame seeds
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Instructions

  1. Cook soba noodles according to package instructions, then rinse under cold water and drain well.
  2. In a bowl, toss the cooked soba noodles with edamame, snap peas, and snap peas.
  3. In a separate bowl, whisk together mayonnaise, lime juice, honey, grated ginger, soy sauce, sesame oil, and sesame seeds to make the sauce.
  4. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until pink and opaque.
  5. Drizzle the sauce over the noodles and shrimp, then top with green onions, red onion, and sesame seeds.
  6. Serve immediately, garnished with extra green onions and sesame seeds.
