Spicy Thai Basil Chicken

A quick, flavorful stir-fry that brings together tender chicken, aromatic basil, and a kick of chili.

Ingredients

  • 1 lb boneless chicken thighs, sliced
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 2 tbsp red curry paste
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 cup Thai basil leaves
  • 1 red chili, sliced
  • 1/4 cup roasted peanuts, crushed
  • Cooked jasmine rice, for serving

Instructions

  1. Heat oil in a wok or large skillet over medium-high heat.
  2. Add garlic and stir-fry for 30 seconds until fragrant.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add chicken slices and cook until browned, about 5 minutes.
  5. Pour in chicken broth, fish sauce, soy sauce, and brown sugar; bring to a simmer.
  6. Reduce heat and cook until sauce thickens, about 3 minutes.
  7. Turn off heat and stir in Thai basil and sliced chili.
  8. Serve immediately over jasmine rice, garnished with crushed peanuts.
