Spicy Thai Basil Shrimp Noodles

Ingredients

  • 8 oz rice noodles
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 cup Thai basil leaves
  • 1/2 cup snow peas
  • 1/2 cup red bell pepper, sliced
  • 1-2 red chilies, sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup sesame seeds
  • 1 lime, cut into wedges

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  3. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining oil, garlic, and ginger. Sauté for 30 seconds until fragrant.
  5. Add the soy sauce, fish sauce, and brown sugar. Stir to combine.
  6. Add the snow peas and red bell pepper. Stir-fry for 2-3 minutes until tender-crisp.
  7. Return the shrimp to the skillet and add the cooked noodles. Toss everything together until well combined and heated through.
  8. Remove from heat and stir in the Thai basil leaves and green onions.
  9. Serve immediately, garnished with sliced red chilies, sesame seeds, and lime wedges.
