Spinach and Ricotta Lasagna Roll-Ups

A healthy summer lunch idea featuring protein-packed spinach and ricotta lasagna roll-ups baked until golden and served with marinara sauce.

Ingredients

  • 12 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil for garnish

Instructions

  1. Cook lasagna noodles according to package directions until al dente. Drain and lay flat on a clean towel.
  2. In a bowl, mix ricotta, chopped spinach, egg, Parmesan, nutmeg, salt, and pepper.
  3. Spread about 2 tablespoons of the ricotta mixture onto each noodle and roll up.
  4. Place roll-ups seam-side down in a baking dish. Pour marinara sauce over the top.
  5. Bake at 375°F (190°C) for 25 minutes until heated through and slightly golden.
  6. Garnish with fresh basil and serve warm.
