Surf and Turf Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 red onion, cut into 1-inch wedges
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into 1/2-inch rounds
  • 1 cup cherry tomatoes
  • 1 cup fresh asparagus spears, trimmed
  • 1 cup baby bella mushrooms
  • 1 lemon, sliced
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together olive oil, soy sauce, garlic, smoked paprika, oregano, salt, and black pepper.
  2. Add shrimp and steak cubes to the marinade, toss to coat, and refrigerate for 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Thread shrimp, steak, red onion, yellow bell pepper, green bell pepper, zucchini, cherry tomatoes, asparagus, and mushrooms onto soaked wooden skewers.
  5. Grill skewers for 3-4 minutes per side, or until shrimp are pink and opaque and steak is cooked to desired doneness.
  6. Serve immediately with lemon wedges.
