Roasted Sweet Potato & Falafel Grain Bowl

One of our favorite healthy summer recipes, this vibrant bowl combines spiced sweet potato patties with hearty grains and roasted vegetables.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup farro, cooked
  • 1 cup broccoli florets
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/4 cup pickled red onions
  • 1/2 cup chickpea flour
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 2 tbsp olive oil
  • Fresh parsley, chopped
  • Tahini dressing for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes and broccoli florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  3. To make the patties, mash half of the roasted sweet potatoes with chickpea flour, smoked paprika, and cumin. Form into small, flat discs.
  4. Pan-fry the sweet potato patties in a lightly oiled skillet over medium heat for 3-4 minutes per side until golden and crispy.
  5. Assemble the bowl by placing a base of cooked farro on one side, topped with pumpkin seeds and fresh parsley.
  6. Arrange the sweet potato patties, roasted broccoli, and remaining sweet potato cubes in sections.
  7. Garnish with pickled red onions and a generous drizzle of tahini dressing.
