Ingredients

  • 4 slices sweet potato
  • 1 ripe avocado
  • 100g smoked salmon
  • 1 tbsp capers
  • 1 tbsp fresh dill
  • 1 tbsp lemon juice
  • 1 tsp black sesame seeds
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice sweet potato into 1/2-inch thick rounds.
  3. Brush sweet potato slices with olive oil and season with salt and pepper.
  4. Roast for 15-20 minutes until tender and slightly caramelized.
  5. Mash avocado with lemon juice, salt, and pepper to create a spread.
  6. Layer mashed avocado onto each roasted sweet potato slice.
  7. Top with a slice of smoked salmon.
  8. Garnish with capers, fresh dill, and black sesame seeds.
  9. Serve immediately on a platter.
