Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sauté until translucent.
  2. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  3. Stir in heavy cream and shredded cheddar cheese. Cook until cheese is melted and soup is creamy.
  4. Season with salt and black pepper to taste.
  5. Ladle soup into bowls and top with crumbled bacon, chopped chives, and fresh parsley.
